Port Douglas institution and one of Australia’s leading seafood restaurants 2 FISH have a new Executive Chef at the helm.

Jed Sneddon has made the move from Peppers Beach Club and is looking forward to taking the 2 FISH experience to a whole new level.

“I’m passionate about giving people an experience to remember,” he said.

“I can’t wait to bring a new level of excitement for our clients, creating new and exciting flavour combinations, using the bounty of abundant local produce, the freshest prawns, coral trout and the exceptional flavours of fruits and herbs.”

With more than 24 years of culinary experience, Mr Sneddon has worked in some of the world’s premier dining destinations from Scotland and Sydney to Auckland.

2 FISH General Manager Meg Oatley said the team are excited to welcome Mr Sneddon to his new role.
“We are delighted to welcome Jed to 2 Fish,” she said. 

“We’ve built a solid reputation and following for our dishes that are based on traditional European cooking with an Asian edge.

“Jed’s love of combining time-honoured French cooking methods with Asian flavours and his impeccable dish presentation will hit the spot for our regulars as well as reaching out to a new audience.

“Jed’s experience with weddings and events and contacts within the local area is a major plus for us too as that side of our business continues to grow.”

Alongside the new executive chef appointment, 2 FISH have also elevated dedicated employee Elgan Rees to restaurant manager.

Hailing from Wakefield, Yorkshire, locals and visitors would already be familiar with Mr Rees, whose friendly and welcoming smile is often people’s first point of contact 2 FISH.

Prior to joining 2 Fish, Mr Rees honed his managerial skills in various venues in his home country as well as during his time at an award-winning resort in Cape Tribulation.

“Working at this beautiful venue and alongside a highly experienced chef, the job ahead of us all here at 2 FISH truly does bring with it an air of excitement,” he said.

“After working in the Douglas Shire for five years now, I like to believe I know the direction that 2 FISH needs to go, creating excitement for our visiting tourists and a meeting place for locals.”

Mr Sneddon and Mr Rees have been working away behind the scenes to bring new menu items and a fresh new feel to the popular restaurant.

“We plan to bring many fresh new ideas that will revitalise the amazing history that 2 FISH already has,” Mr Rees said.

“Seasonal menus, an inspiring beverage list and regular wine and dine events, are just a few of our steps we will make moving forward. Watch this space!”
