SAILS by Hemingway’s, the brand-new wine and cocktail bar that has quickly become a community favourite, is raising the culinary stakes. In direct response to guest feedback craving heartier lunch and dinner options, this hotspot has added exciting new dishes to its menu.
Ever since their grand opening in August, SAILS has become a cherished part of the community.
Full dining experience
Already known for its delectable tapas-style and shareable plates such as seared sashimi tuna and charcuterie boards, SAILS by Hemingway’s has now introduced even more tempting options.
Mr Haslinger loves every dish on the menu and said picking a favourite is like choosing a favourite child.
“Our menu is rooted in the tradition of European cuisine, with a distinct Mediterranean influence that beautifully complements our wine offerings,” Mr Haslinger said.
He also emphasised the influence of our esteemed Peruvian head chef, Karel Polo Solis, who adds a distinct Peruvian touch to every dish we proudly present.
“First, there's the mouthwatering Italian-style pizza featuring the harmonious pairing of pear and gorgonzola, adorned with pickled radicchio and caramelised onions,” Mr Haslinger described.
“It's a flavour symphony that beckons for a glass of Pinot Noir and the enchanting tunes of Italy.”
“Then, we have our homemade patés and terrines that bring rustic French wine-tasting adventures to mind.
“For a refreshing option, try the reef fish ceviche, ideal for sunny days in Far North Queensland. This dish takes on a new dimension with Chef Karel's secret ingredient—his unique ‘tiger's milk’.
“One of our most special dishes is the authentic Swiss cheese fondue. Perhaps it's my Alpine heritage, but there's something truly special about sharing a pot of cheese, sipping on fine wine while sharing stories.”
“Adding substance and flair to our menu are our latest additions: a seasonal seafood pasta and a vegetarian linguine featuring oyster mushrooms, asparagus, and truffle.
“The final piece to our menu jigsaw puzzle must be Chef Karel's masterpiece: the Reef & Beef. This creation showcases Tableland beef eye fillet and local prawns, accompanied by cassava croquettes and an exotic Peruvian cream sauce called Huancaína sauce. It's a culinary journey into the extraordinary.
SAILS is open for dining Thursday to Sunday, 12 PM - 9 PM, and available for private functions. The next event on the calendar is a Melbourne Cup cocktail function, with tickets on the website.
